Winter Warmer – Roast Butternut Squash Soup

It’s blowing a gale and all I want to do is eat sweet treats, but it’s almost the 1st of December, and that’s when I allow myself to indulge on mince pies and all the goodies that have been winking at me since October.

In preparation for my upcoming sugar binge, I’ll be trying to be good with my midweek dinners by eating yumcious soups. One of my favourites is this lightly spiced one made with butternut squash. it’s seasonal, easy, and extremely comforting it’s a proper hug in a mug.

Spiced Roast Butternut Squash Soup 

1 small butternut squash, diced with the skin on

1tsp ground  cumin

olive or rapeseed oil which is my preference

1 tablespoon coriander seeds

1 red onion, roughly chopped

2 cloves of garlic, finely chopped

thumb size knob of peeled ginger, finely chopped

half a red chilli – or a whole one if you want it hot – finely chopped

1 tin good quality tomatoes

1 can coconut milk

500ml of veg stock

and to finish

1 tablespoon Tahini

1 tablespoon Tamari 


coriander, fresh lime juice, fresh coriander

preheat the oven to 22o, line a roasting tin with foil – this saves washing up –  chuck in the chopped butternut squash, season with salt and pepper and sprinkle with the ground cumin and a glug of olive or rapeseed oil. Mix it all together with your hands, put in the oven, and immediately turn it down to 200 and roast for 30 mins.

Heat a glug of olive or rapeseed oil in a large pan and once it’s hot add the coriander seeds and let them sizzle till they become fragrant, around a minute. Add the chopped onion, garlic, ginger and chilli, turn the heat down and cook gently for around 15 minutes to release all the flavours. Add the tinned tomatoes, cook for 5 minutes so they sweeten up slightly and lose their acidity. Add the cooked butternut squash and the coconut milk, bring to the boil and simmer for 30 minutes.

Let the soup cool for 1o minutes and then whizz with a stick blender and finish off with a tablespoon of Tahini and a tablespoon of Tamari sauce and if you fancy a squeeze of fresh lime, some fresh coriander and extra chilli.

Pour into a large mug and enjoy your hug.

NB this soups tastes particularly good when accompanied by a comfy sofa, a blanket and a double bill of Series 3 of The Bridge
